My family can’t get enough of Chipotle’s burrito bowls—probably more than we’d like to admit! So, I decided to recreate them at home for a fraction of the cost.
Not only is it way tastier and packed with flavor, but it’s also perfect for meal prepping—making lunch or dinner throughout the week a breeze!
We love burrito bowls so much that we’ve created several delicious variations, like our ground chicken rice bowl and chickpeas rice bowl!

- Chicken – I use our favorite spicy chicken made on the stovetop in a cast iron skillet for maximum flavor. The blend of Mexican spices makes it incredibly tasty, while the chicken stays juicy and tender with every bite.
- Rice – I use our homemade instant pot cilantro lime rice, bursting with vibrant flavor from fresh lime and cilantro. It’s so delicious, it rivals the rice from Chipotle!
- Pico de gallo – Fresh pico de gallo is the perfect condiment, adding vibrant color, texture, and a burst of contrast in flavor.
- Avocado – No chicken burrito bowl is complete without creamy ripe avocado—feel free to swap in some guacamole for an extra boost of flavor!
- Black beans – It adds a boost of nutrition, hearty texture, and flavor. Plus, canned black beans make it quick and convenient!
- Corn – Corn adds a natural sweetness and a pop of vibrant yellow, boosting both the flavor and visual appeal of your rice bowl. Its crisp texture perfectly complements the other toppings, creating a satisfying blend of tastes and textures in every bite.
- Sour cream – It offers a creamy, cool contrast to the spicy heat, with its tangy flavor perfectly balancing the boldness of the chicken and rice.
How to make chicken burrito bowl at home?
Step 1 – Coat boneless, skinless chicken thighs with homemade taco seasoning and a bit of oil. Cook in a skillet over medium heat until fully cooked. Once done, add a splash of stock or water, then stir in fresh chopped cilantro and a squeeze of lemon juice for extra flavor. Let the chicken cool slightly before dicing it into bite-sized pieces.
